Henny’s still serves great coffee, and much more now with help from REV

Have you tried the turkey pesto sandwich yet?

It’s the signature sandwich at Henny’s in Crosby, a downtown coffee shop and eatery that offers a quick, delicious option to anyone in the city in need of quality coffee and a quick bite.

“We’re a specialty coffee shop. We have any espresso-based drink, along with different tea and Thai tea options, smoothies, baked goods and more,” said Nakita Swanson, who runs Henny’s and owns it with her husband of seven years, Tyler.

They now offer sandwiches, soups and fruit and vegetable cups thanks to earnings from the 2018 The Bank of Tioga REV business pitch competition. Henny’s took home third place and $3,000 at the event, and used that money to expand the menu, including adding its “signature sandwich,” the turkey pesto.

The bank is again partnering with the Tioga Area Economic Development Corporation to help provide an opportunity for business growth through the REV program, where entrepreneurs and business owners have the chance to win up to $10,000.

“We were able to broaden our menu, we wanted to target more of a lunch crowd. It’s grab-and-go style,” Swanson said.

The earnings were also used toward kettles for making soup and Henny’s merchandise to offer customers.

“We broadened our baked goods menu as well. We’re now able to offer more pastries,” she said.

Henny’s opened in July of 2015 and moved to the Main Street district in Crosby in June of 2017. Swanson said she was happy she applied to and participated in REV last year.

“It was a little nerve-wracking,” she said. “But the experience was great. Everyone was great. They brought ideas to table outside what we wanted to do. It was fun to hear other people’s ideas and take on our business.”

The Bank of Tioga and Tioga Area Economic Development Corporation will hold REV 2019 at 1 p.m. on Nov. 7 at the bank’s Crosby location, 11 Central Avenue E.

To apply for REV now – go to thebankoftioga.com/rev to enter the competition. Email completed applications to marketing@thebankoftioga.com or drop them off at either of The Bank of Tioga locations – 11 Central Avenue E, Crosby, N.D. 58730 or 7 N. Main St., Tioga, N.D. 58852.

Applications are due by Oct. 20.

“I think it’s a great opportunity that every business owner if looking to expand should look into it. Don’t be afraid, it’s well worth it,” Swanson said. “We’ve definitely had a positive impact from it and we’re making more money because we were able to do this.”
